1 l Geflügelbrühe

2–3 EL Senf
2 EL Sahnemeerrettich
80 g Butter
Zucker

Salz
Pfeffer
Kartoffeln schälen und in grobe Stücke schneiden.

Zwiebeln würfeln und mit den Kartoffeln zusammen in Butter anschwitzen.
Kopfsalat, Lauch und Sellerie schneiden und zugeben, mit Geflügelbrühe aufgießen und so lange kochen, bis die Kartoffeln weich sind.
Mit Sahne auffüllen und kurz aufkochen lassen.
Senf, Sahnemeerrettich, je nach Geschmack Zucker, Muskat und Zitronensaft zugeben, mit Salz und Pfeffer abschmecken und alles pürieren.
